If you’re like me there’s never enough time in the morning but you still want a healthy tasty breakfast and these baked prosciutto egg cups are a great make ahead option the can be reheated in minutes. Baked Prosciutto Egg Cups are perfect for low carb, keto and paleo diets or great if you want a quick and delicious breakfast for a larger group with minimal effort.

  • Sliced Prosciutto
  • Eggs
  • Baby Spinach
  • Olive Oil
  • Salt
  • Pepper

How to Make Baked Prosciutto Egg Cups

These eggs cups are simple to make and are great for feeding a family, meal prep or even a fancy brunch. You can also customize these egg cups with your favorite veggies (some vegetables like mushrooms and bell peppers may need to be sauteed first before using in this recipe) or add some herbs (I like basil and thyme) or cheese (cheddar, feta and goat cheese are tasty options).

Preheat oven to 400 degrees and brush olive oil in each compartment of the muffin tin. Place one slice of prosciutto inside each compartment, pressing to make sure the sides and bottom are fully lined (you may need to tear the prosciutto into several pieces to more easily get a cup shape). Place 2-3 baby spinach leaves inside each cup and top with an egg. Sprinkle with salt and pepper to taste. Bake for 12 minutes for an egg yolk that is slightly jammy, or up to 15 minutes for a harder set yolk.

To reheat eggs later you can either heat them in the microwave for 30-45 seconds or in the oven for 4-5 minutes at 350 degrees.
