A Beetroot Smoothie is impossible to ignore. It is sweet, fresh & tangy and blends to a bright & cheerful shade of pink. This pink smoothie comes loaded with apple and ginger flavours too. It’s healthy fun in a glass.

Meet my new friend, the Beetroot smoothie. This beauty contains beetroot – obviously – but also apple, ginger, chia seeds, spinach and a pleasing dollop of yoghurt.

This pink smoothie manages to deliver a fresh, sweet and tangy flavour. It does not taste like earth – poor old beetroot has a harsh reputation to contend with there.

What I love about this beetroot smoothie is that no single ingredient dominates its flavour, they simply combine to create a healthy drink that tastes fantastic.

The spinach and chia seeds just melt in un-noticed. But a bite of comforting warmth from the ginger and a hint of tartness from the apple both shine through.

Don’t be scared to try this Vegetable Smoothie Recipe

Rewind a few years and I would have declared myself out of this particular smoothie combo. Scarred in my early years by carrot juice (leaves me cold) and tinned tomato juice (makes me shudder), I was happy to remain outside the vegetable smoothie camp for a long time.

But things change. A friend convinced me to give a beet smoothie a whirl and I was pleasantly surprised.

If you also have your doubts I urge you to try it out. Gather a group of family or friends together and make a batch. What’s the worst that can happen?

Is this Drink Healthy?

Not only is this Beetroot Smoothie a luscious shade of pink, but it is also very healthy:

  • beetroot helps lower blood pressure
  • apples are packed with fibre
  • spinach is great for energy levels
  • ginger helps alleviate… um… flatulence
  • and chia seeds are high in fibre, protein and omego-3 (wow, punchy little seeds)

No wonder this vegetable smoothie blushes so pink.

How to Make this Drink

It would be very easy to tell you to put all ingredients into your blender and whizz it up for a minute. It’s a smoothie, so that’s the essence of what needs to happen.

And, if you have a high powered blender such as a Nutribullet 1200 or Vitamix, that is exactly what you can do.

However, not all blenders are equal and raw beetroot is a very tough cookie for typically less powerful domestic blenders to handle. So I have a few ideas to share to help you achieve a beet drink that is…. well, smooth, for want of a better word.

Tips for Blending Raw Beetroot at Home

First of all, it’s ok to make this recipe with raw or cooked beetroot. I’ve given instructions for making it with raw beets since this is the fastest option.

To end up with a drink that is as smooth as possible I recommend grating the beetroot (and apple for that matter) rather than adding big chunks directly to the blender.

If you are not totally convinced that your blender has the power to handle the beetroot, try roasting the beets in foil ahead of time (around 1.5 hours at 200C/ 400F/ GM 6). Let it cool completely and then simply add to the blender with the other ingredients.

Ingredients

  • 1 Medium beetroot bulb raw (see notes)
  • 1 Granny Smith apple – peeled cored & chopped **(see notes)
  • 150 ml Apple juice
  • 5 g Ginger (about the size of a cherry tomato) – peeled and chopped
  • 10 g Chia seeds
  • 2 teaspoon plain yoghurt
  • 10 g spinach leaves
  • A Handful of ice cubes

Instructions

  • Peel and grate the beetroot

  • Peel and core the apple then grate

  • Put the beetroot, apple, juice, chia seeds and ginger into the blender and blend on full speed for 1 minute

  • Add the yoghurt, spinach and ice and blend again, on full speed, for a further minute. Blending two times really does help breakdown the beetroot to give a smoother drink

Notes

1. If you have a blender that is not of professional standard (e.g Vitamix) you may prefer to roast the beetroot first to ensure a smoother texture in the drink – wrap in foil and cook for 90 mins at 200ºC/400ºF/ GM 6. Let it cool completely before using

2. It’s up to you whether you peel the apple. Again, if you have a top quality blender you can get away without doing so.
