From nail-biting games blasting from our TV, to tailgates with friends, to sporting our favorite team’s apparel, to of course a lot of football food, like thisCaramelized Onion and Mushroom Hummus, and good times with friends!

We have had a blast enjoying all things football, but can I be a little bit honest with you, it has been a little hard. You see, if you have been following this blog for any amount of time, you know I wholeheartedly believe in the “all things in moderation” motto and way of life. Not just regarding diet and exercise, but with regards to a healthy work/life balance too.

AND if you have followed this blog this year, then you know I have worked hard to train for my first 5k, be more active, add daily meditation to my life, and really balance a life of FUN and my favorite eats, all while being active and healthy. That’s why the past few weeks have been hard…. While my favorite tailgating eats are delicious, they are definitely those foods that should be enjoyed in moderation.

Luckily, whenever I host any get-together or attend a potluck party or tailgate, I always plan to serve or bring a vegetable platter. After hosting many parties and events, I have learned fruit and vegetable trays are not only easy to throw together, they add a pop of freshness and healthy bites to an often heavy party spread.

Since I have had the honor of hosting many tailgates, Thanksgiving dinners and various baby and bridal showers over the years; I finally broke down and became a member of Sam’s Club. Not only could I stock up on party paper goods, like plates and cups, for a great price at Sam’s Club, I quickly found that shopping there was perfect for not only buying party food, but for stocking up on all my health and wellness needs.

Not only can I get a ton of quality fresh fruits and veggies, for parties and my own healthy snacking and cooking at Sam’s Club, but I can get other health foods like coconut oil and gluten free flours, as well as vitamins and health supplements. In fact, Sam’s Club even has a free online health and wellness magazine called Healthy Living Made Simple (with health tips and recipes); my local Sam’s Club even offers free health screenings on the second Saturday of every month.

Since I know I am not the only one who likes to see some better for you party food options, I thought I would share a healthy tailgating recipe with you today! Like I said, I love serving vegetable platters with some sort of dip at the parties I host, and surprisingly it is always the first thing to go on the food table! While most vegetable platters are served with a creamy dip, I thought I would change things up and serve something healthier and more flavorful- hummus!

Inspired by an article I read in the Healthy Living Made Simple Magazine, which highlighted the super food for September, mushrooms, I created this Caramelized Onion and Mushroom Hummus for our last tailgate. While it took many years, I finally became a mushroom lover, and I love adding this superfood to everything from salads, to soups, to black bean burgers. Since I know a lot of people aren’t as big a mushroom fan as I am, I was a little worried how this Caramelized Onion and Mushroom Hummus would go over with my die hard football friends. BUT, yet again, the hummus and vegetable platter was the first thing to go at our tailgate. If that isn’t a sure sign of a winner, I don’t know what is?

Caramelized Onion and Mushroom Hummus

Creamy bean dip with robust, caramelized onions and earthy mushrooms.

Course: Appetizer

Servings: 1 -1 1/2 cups hummus

Ingredients

  • 1 tablespoon unsalted butter
  • 1/3 cup olive oil divided
  • 1 large yellow onion diced
  • 2 cups diced white button mushrooms
  • 2 cloves garlic minced
  • ½ teaspoon each kosher salt and black pepper or to taste
  • 1 14.5-ounce can garbanzo beans, drained and rinsed
  • ¼ cup tahini
  • ¼ teaspoon ground cumin
  • 1 large lemon juiced and zested
  • 4-5 tablespoons cold water

Instructions

  1. In a large skillet, heat 1 ½ tablespoons olive oil and butter over medium-high heat. Add the sliced onions and ¼ teaspoon salt and black pepper. Sauté for 12-15 minutes, stirring occasionally, or until onions are soft and caramelized. Stir in mushrooms and cook for 3-4 minutes, or until softened. Stir in garlic and cook for 1-2 minutes. Remove from heat and set aside to cool.

  2. Place half of the cooled onion and mushroom mixture in a food processor or high power blender. Add remaining olive oil, garbanzo beans, tahini, cumin, lemon juice and zest. Blend on high, mixing just until mixture becomes somewhat smooth and combined, but do not over mix. Add water, 1-2 tablespoons at a time as necessary, to ease blending process.

  3. Pour mixture into a bowl and stir to combine. Season to taste with remaining salt and pepper. Top prepared hummus with remaining sautéed onions and mushrooms. Serve immediately with fresh vegetables or multi-grain chips or refrigerate in an air tight container for 3-4 days.

Recipe Notes

For vegan, omit butter and replace with additional olive oil.
