Sunday was the best ever. It was dark and raining, actually POURING, all day. I wore my baggiest sweats and drank Chai tea lattes in bed. Pete and I were our nerdiest selves all nestled in with our laptops and watching movies like “Mermaids”, “Bridget Jones Diary” and “Back to School” with Rodney Dangerfield. But we also supervised Pia making a Leprechaun trap. The best part about it is that she like REALLY and truly believes that she will catch a Leprechaun. She has made all kinds of plans about what she will do with him and what she is going to ask him for. She is way less interested in his pot of gold. What she wants are the wishes that she thinks he has the power to grant. And as all of our 7 year old versions of ourselves have fantasized, the one thing she would wish for is “more wishes”. And then after that, she said that she would wish for us to not have food allergies anymore. Awwww!!!! How sad is that?! Anyways, that made me want to bake her homemade bread and bake cookies so that she didn’t hate her allergies so much. That helped brighten up our Sunday.

I am still working on Book recipes, so that is what I made them eat for dinner last night, but tonight I am making this Chicken Ginger Tahini Stir Fry. Because this is Monday Food. That means it’s fast, easy and the whole family will want to eat it. Fair enough?

Fresh crunchy bell peppers, green peas and tender chicken are all tossed in the most incredibly delicious sauce of tahini, garlic, ginger and sesame. SO GOOD. Plus it just take a few minutes to make this, and the steamed white rice can steam while you are making it.

Recipe: Chicken Ginger Tahini Stir Fry

Ingredients

  • Sauce:
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon tahini
  • 2 tablespoons sesame oil
  • 1 tablespoon honey
  • 3 tablespoons rice vinegar
  • 2 tablespoons hoisin sauce (gluten free)
  • 2 tablespoons vegetable oil
  • .75 lbs chicken breast cut into small pieces
  • 1 fresh red fresno chili, minced
  • 2 garlic cloves, minced
  • 2 tablespoons fresh ginger, minced
  • 1 red bell pepper, thinly sliced
  • 1 yellow pepper, thinly sliced
  • ½ cup fresh peas, hulled

Instructions

  1. In a small bowl, whisk the sauce ingredients together.
  2. In a large heavy pan over very high heat add the vegetable oil. Add the chicken and fry for 1 minute, stirring until the chicken is partially cooked through.
  3. Add the chili, garlic and ginger and cook one more minute. Then add the peppers and the sauce and cook for 1 minute, add the peas and cook for another minute longer.
  4. Season to taste with kosher salt and serve hot over steamed rice.
