Best Ever Whole30 Mashed Potatoes

If you are looking for the PERFECT side dish to liven up your Whole30 (or you need the perfect dairy-free mashed potato recipe), then you need to try these! Not only are they easy to make (they take about 15-20 minutes total), but they are also so creamy and flavorful! I especially love them because, as always, I can never eat mashed potatoes when I go out to eat because they inevitably have milk or cream or butter …. or all of the above. So I eat these all the time, even when I am not doing a round of Whole30. Plus, the whole family loves them!

What You Will Need

  • Yukon gold potatoes – you can use also make this recipe with russet potatoes or even sweet potatoes, but we love the rich, classic flavor of Yukon golds!
  • kosher salt – the perfect simple seasoning.
  • coconut milk – we love this one, but any dairy-free milk will work, almond milk, oat milk, etc.
  • ghee – whether you are making your own homemade ghee or purchasing some from your local grocery store, this will add so much flavor and creaminess to your bowl of potatoes!

How To Make Easy Whole30 Mashed Potatoes

You can begin by selecting your potatoes, rinsing them with water, and then patting they dry with clean paper towels.

Now grab your large kitchen knife and cutting board to cut your potatoes into large chunks.

Bring water in a medium saucepan to a boil on medium high heat. Once it is boiling you can carefully add the chunks of potatoes and simmer for 10-15 minutes or until you can easily pierce them with a fork. Then drain potatoes in a colander and place in a medium mixing bowl.

Add the rest of your ingredients and use a potato masher or hand mixer to fully mash the potatoes and combine all of the ingredients. Taste and adjust to your liking.

There are so many great ways to serve these classic mashed potatoes. We frequently make them on a busy weeknight with some oven baked pork chops, mini meatloafs, or pickle brine chicken. Or we dress them up for our favorite holiday meals with a simple baked ham or smoked turkey! No matter how you serve them, everyone is going to love the rich, creamy texture.

  • peeled potatoes: for a more creamy texture, take the extra few minutes to peel your potatoes, but you don’t have to. This recipe will turn out either way.
  • cooking methods – this recipe uses the stovetop, but you can also easily make this recipe in a slow cooker or Instant Pot. Just used the methods linked here but the ingredients used in this recipe card.
  • variations – we kept this one simple with ghee, coconut milk, and salt, but you can easily add a variety of other spices and herbs for different flavors! They would be great with chives, thyme leaves, or even a little dairy-free sour cream.
  • Whole30 garlic mashed potatoes – everything is better with garlic, including homemade mashed potatoes! Simply add some garlic powder or minced garlic when mashing them up.

Ingredients

  • Approx. 10-12 Yukon gold potatoes
  • 12 teaspoons kosher salt, more to taste
  • 1/41/2 cup full fat coconut milk
  • 24 tablespoons ghee, melted

Instructions

  1. Cut up potatoes in chunks while you bring a pot of water to boil.
  2. Add potatoes and let them simmer until they are very tender and you can easily pierce with a fork, approximately 10-15 minutes.
  3. Drain potatoes and place them into a large mixing bowl.
  4. Use a potato masher and mash the potatoes down.
  5. Add 1 Teaspoon of salt, the ghee and 1/4 cup coconut milk.
  6. Use a hand mixer to blend everything together.
  7. Taste – if they need to be smoother/creamier – add additional coconut milk and/or ghee; if they need more salt add the additional teaspoon and then add a pinch at a time after that.

Notes

  • Peeled potatoes: for a more creamy texture, take the extra few minutes to peel your potatoes, but you don’t have to. This recipe will turn out either way.
  • Coconut Milk: I can’t recommend this carton of coconut milk enough!
  • Ghee: feel free to usethis homemade ghee recipe or store-bought
  • Other types of potatoes: this will also work with russet potatoes, but I highly recommend Yukon gold – much more creamy in my opinion.
  • Storage: Store in an airtight container in the refrigerator for up to 5 days.

    Than you for your wonderful recipes!
    I love using the Simply Balanced (Target) brand of canned organic unsweetened coconut milk. I find it to be creamy all the way through the can with no separation at all even at room temp compared to the Thai Kitchen organic unsweetened coconut milk I used to buy at Costco. I would have to make sure that one was well shaken before I put it in the fridge and even then I ended up with about 1/2 can of water. at least I would use the coconut water in a smoothie so it didn’t go to waste!
    Just my opinion, though 😉

      Yes, you can use canned, full-fat coconut milk – recently though I have been buying the Thai Kitchen coconut milk in a carton (ingredients are just coconut milk + water) and it is so nice because it doesn’t separate! I find it at Target. Hope that helps!

      Hi Michelle! You can use whatever milk you want, I just used coconut milk here to really make the mashed potatoes extra creamy 🙂 another type of milk will work, you might just lose a little bit of that creaminess!
