In the fall and winter we love to make soup. When I was growing up my Mom would always make me soup when I was down with a cold. Potato soup was always my favorite, along with a buttered bagel to dip into it. Now that I have grown up a like to make my “grown up” version: Beer Cheese Potato Soup.

We have to be very careful about not getting the flu in our house. My husband had a kidney transplant and, due to his meds, he has a low immune system. We always get flu shots and I head to Target to stock up on stuff to help at the beginning of winter. Here are my go to items:

  • Kleenex brand tissues (we seriously have a box in every room)
  • Kleenex hand towels – we use these in our bathroom to keep from transferring germs after we wash our hands.
  • Kleenex Pocket Tissues – to keep in my purse, car and the kids backpacks
  • Target Up disinfectant spray – to spray all the door knobs, toilet handles and any other places we all touch once a month
  • Gatorade – if we do get sick it keeps us hydrated
  • Hot Tea – just feels good in the winter and the heat helps unclog your sinuses

While I was there I also picked up the ingredients to make my beer cheese potato soup. This soup freezes well so when you have a cold you don’t have to make any just thaw it and eat it!

When you go to get stocked up on your favorite cough, cold and flu items at Target you can grab the $1 off Kleenex 4 packs or larger couponjust like I did. Be careful there is only a 2 click per IP address limit so you will want to make sure you can print it when you open it!

Cornstarch. Cornstarch is a very effective thickener, and a little bit can go a long way. Add cornstarch to a small amount of cold water or other liquid (wine or stock) and whisk into a thick slurry. How to thicken potato soup without cornstarch? ›

Try adding instant potato flakes, mashed potatoes, or additional diced potatoes to a potato soup to thicken it at any point in the cooking process.

Does cream cheese thicken up potato soup? ›

Cream cheese can be a delicious and tangy thickener for mashed potatoes so it stands to reason that it can also be used to add body to your favorite silky potato soup recipes — right? The answer is yes. It only works well if you do it carefully, though.

What makes potato soup gummy? ›

"Because you can taste the glue-iness in the texture. See how it's a little sticky and gooey on your tongue? That's because when you blend potatoes, it causes swollen starch granules to burst, which makes the whole thing sticky, like melted cheese or dough."

What is the secret ingredient to thicken soup? ›

Add flour or cornflour

Put a tablespoon of either into a small bowl and stir in 2-3 tbsp of the soup until you have a smooth mixture. Stir this back into the soup and bring it to a simmer. Cook for a few minutes to allow the starch granules to burst to thicken, and to cook out any flour flavour.

Do you use flour or cornstarch to thicken potato soup? ›

Whisk 2 tbsp (25 g) of cornstarch or 2 tbsp (30 g) of flour with 14 cup (59 mL) of cool water. Once the starch is completely dissolved, pour the slurry into the main pot. Heat the soup to boiling for 1 minute, then reduce the heat and simmer until the soup is as thick as you'd like it.

It's important to note that cornstarch has twice the thickening power of flour. If you need to substitute cornstarch to thicken liquid in a recipe that calls for ¼ cup (four tablespoons) flour, you only need two tablespoons cornstarch.

Why won't my cream cheese melt in my potato soup? ›

Cheese is a particularly tricky addition to soups because if the temperature of the soup is too hot or too cold, the cheese won't melt properly and will start to clump. Temperatures over 150 degrees Fahrenheit will cause the cheese to release liquid too fast as a result of broken protein bonds.

How do you make potato soup less soupy? ›

To thicken potato soup without creating lumps, you can use a roux made of equal parts butter and flour. Melt the butter in a separate pan, add the flour, and whisk until smooth. Slowly whisk the roux into the soup, and let it simmer until thickened.

How do you keep potatoes from getting mushy in potato soup? ›

Cut the potatoes into rissolettes and blanche them (i.e. cook them briefly, not to full doneness). Use the water you used in the soup and put the potatoes back in when you go to warm the soup again for serving. Since they're cut fairly small, they should be just about done without being mushy when you go to eat.

How to make can potato soup taste better? ›

A pinch of seasoning can make all the difference to freshen up the flavors in a ho-hum soup. Most canned soups have plenty of sodium, so skip the salt and stick with spices like cumin or curry powder or try dried herbs like basil or rosemary.

Why aren't my potatoes getting soft in my potato soup? ›

It's best to use fresh, firm potatoes. Acidic Ingredients: If your soup contained highly acidic ingredients (e.g., tomatoes), it could have affected the texture of the potatoes. Acidic ingredients can slow down the softening process of potatoes.

Can you thicken potato soup with potato flakes? ›

This soup-thickening hack couldn't be easier. Unlike using flour, which requires either making a little roux before you start cooking or a beurre manié afterwards, or using a cornstarch slurry that can create a gloppy texture, the instant mashed potato flakes can simply be sprinkled into the finished dish.

How do you thicken soup without flour or potatoes? ›

A handful of uncooked rice. That's all folks, just a handful of white rice. Any kind will do: jasmine, basmati, short grain, long grain. How do you thicken creamy potatoes? ›

You can use what you have on hand: Flour, cornstarch, or powdered milk are all solid options that are probably already in your pantry. Potato flour and potato starch would work as well.
