I shared a recipe for prosciutto-wrapped brie in pastry a couple of years ago. It’s since become one of my personal favorites, I make it all the time. My family loves anything wrapped up in prosciutto.

While I was in New York last week thinking up our very last holiday recipes, I wrote this idea down, and it stayed in my thoughts for days. I was so excited to return this past weekend to make these rolls! I knew they would turn out good, but they were even better than I pictured!

Details

Step 1: slice the brie and wrap in prosciutto

Pick up your favorite wheel of Brie from the grocery, then slice it up into eight slices. Ideally, try to use a 12-ounce wheel of Brie. And there’s no need to peel away any of the rind. Leaving the rind on will ensure the yummy Brie bakes up nicely inside each pastry without too much mess.

Now, take thin slices of deli prosciutto and wrap a single slice around a slice of Brie. The idea is to mostly cover the slice of Brie.

Step 2: the pastry

Take your sheets of thawed-out puff pastry and cut each sheet into 4 squares to make a total of 8 squares.

Spread each square with fig preserves or use honey, whatever you prefer. Add the prosciutto-wrapped Brie and some freshly cracked black pepper.

Step 3: baking

Now, you can brush the pastries with a beaten egg and add a sprinkle of coarse sugar. This step isn’t needed, but it makes the pastry really sparkle. It’s fun for the holidays and adds such deliciousness too.

Then just throw the brie rolls in the oven, and you’re done.

When the pastries come out of the oven, serve them immediately. I like to drizzle them with honey, top with thyme, and then put some pomegranate arils on the side for festive color. Plus, I think these additions are delish.

It’s hard to describe just how good these rolls are. The prosciutto really adds a savory saltiness that pairs so well with the rich Brie. And the honey on top just sweetens the deal.

FAQs

Do you cut the rind off baked brie? ›

Keep the rind on, as it will help the cheese hold its shape so it doesn't all melt out. The rind is also edible, so you can enjoy it with the melted cheese, or simply remove the top layer after baking and dunk in crusty bread like a fondue.

Why is my baked brie rubbery? ›

Why is my baked brie rubbery? This can be two things. If you left the rind of the cheese on, the baked brie may seem like it is rubbery once heated, or the brie was overcooked by leaving it in the oven too long.

Do brie and prosciutto go together? ›

The prosciutto really adds a savory saltiness that pairs so well with the rich Brie. And the honey on top just sweetens the deal. Make a few batches for everyone to enjoy. These will certainly be the most popular app on the table!

Do you eat the crust on baked brie? ›

No, you don't have to remove the rind before baking brie. The rind is edible and I don't even think you can taste it after the brie is baked. If you want to remove the rind, you can use a sharp knife to carefully cut off the thin rind of the cheese at the top of the wheel.

Does the cheese skin stay on when serving baked brie? ›

In this baked brie recipe, I do not remove the rind because I need the surface to spread my jam and to add my beautiful nuts and toppings. The rind keeps the wheel of cheese together, and once you take it out of the oven and slice into it, all the gooey deliciousness oozes out like a nice surprise!

Can you eat the skin on baked brie? ›

Yes, the bloomy rind is completely safe to eat and even keeps the inside safe from any potentially unwanted microorganisms during production. The rind on Brie not only protects and encases the cheese – it also adds a subtle, earthy flavor.

What do Italians eat with prosciutto? ›

People of the Mediterranean, and I will say particularly in Italy, have been pairing sweet, perfectly ripe fruit with salty, cured meats for quite some time. Figs, pairs, apples, and melons (or cantaloupe) are among the fruits that pair very well with prosciutto.

What drink pairs well with baked brie? ›

Six top drink pairings for Brie

* A creamy, subtly oaked chardonnay - even a posh white burgundy! * A cherry or raspberry-flavoured fruit beer (Kriek or Frambozen), particularly when the brie is accompanied by fresh cherries. * Guignolet (a cherry-flavoured French aperitif) by the same logic.

Is brie good for your gut? ›

Based on some studies, there are many health benefits of eating brie cheese. According to some studies, it might reduce inflammation and improve immunity. It might also aid in digestion if had in moderation.

How do the French eat brie? ›

Traditionally, the French give cheese its own dedicated course at a meal, served just before dessert. However, serving cheese at a party or for an appetizer is widely accepted (and with good reason). Don't hesitate to open your gathering, dinner party, or snack session with delectable Brie.

Why does my brie taste weird? ›

It may be a turnoff but it's a consequence of aging, especially for bloomy-rind cheeses like Brie. As these cheeses ripen, their surface molds break down protein into amino acids and one byproduct of that breakdown is ammonia.

Are you supposed to remove brie rind? ›

Soft-ripened cheeses: have what are called a "bloomy rind" which are a flavorful, textured, and very edible crust. This perfectly-safe-to eat-rind is made from mold and yeast which encourages the cheese inside to ripen. It's also what gives soft-ripened cheeses like Brie their lusciously creamy texture.

How do you eat brie with rind? ›

You should absolutely eat brie's signature bloomy rind. It's customary to enjoy the whole wheel, rind and all. Though eating the rind on top and bottom is very standard, some may feel the need to cut off the perimeter bits. This isn't necessary and wastes beautiful cheese.

How to eat baked brie? ›

Serve: Place a small knife or spoon next to the brie for serving. Serve with apple slices, grapes, figs, and some crackers and baguette slices for spreading the melty cheese. To Reheat: The brie will stay melty for about 15 minutes, but spreadable for about 30 minutes.
