This AIP/Paleo Sheet Pan Sweet and Sour Chicken and Vegetables recipe is the epitome of an easy sheet pan dinner! Like my Sheet Pan Beef and Broccoli with Mushrooms, the bake time is so quick, only 15 minutes! And, you save on dishes since it’s all made in one pan. That’s what I call a win-win!

Tender chicken and fresh veggies are covered with a homemade, gluten-free sweet and sour sauce that’s part tangy, part sweet, and bursting with flavor! It’s AIP and allergy-friendly, and just might be your new go-to quick meal.

What you’ll need to make this AIP/paleo sheet pan chicken with vegetables in a sweet and sour sauce

For the Homemade Gluten Free Sweet and Sour Sauce

  • pineapple juice + coconut sugar – the “sweet” in this refined sugar-free sweet and sour sauce
  • coconut aminos + apple cider vinegar – the acidity of these ingredients creates the tangy, “sour” part in this sauce. Coconut aminos are paleo and AIP-compliant, and mimic the umami taste of soy sauce used in traditional sweet and sour sauces. Coconut aminos can be substituted with more nomato sauce. ACV can be substituted with rice wine vinegar.
  • sea salt – only a bit is needed
  • nomato sauce – provides a lovely depth of flavor. you can substitute with ketchup or tomato paste if you aren’t nightshade-free or following AIP
  • arrowroot starch and water – to make a slurry which helps thicken the sauce

For the Sheet Pan Chicken and Vegetables

  • chicken thighs or breasts – use your preferred cut. boneless and skinless pieces are easiest to use in this recipe.
  • olive oil and sea salt – to season the veggies
  • red onions, baby bok choy, broccoli and pineapple chunks – you can use fresh or tinned pineapple chunks and reserve the juice for the sauce. customize these veggies with whatever you like, just be mindful the bake time may differ depending on the type and size of veggies you choose. The juicy bites of pineapple chunks definitely add some extra flavor to this dish while the bok choy adds a nice crunchiness– I wouldn’t skip these!

to make aip/paleo sweet and sour chicken and vegetables on a sheet pan:

  1. First, prepare the sweet and sour sauce and set aside to thicken.
  2. Then, season the chicken with olive oil, salt, and sweet and sour sauce. Marinate in fridge for 30 minutes – 1 hour.
  3. Season the vegetables with olive oil and sea salt.
  4. Next, line a large sheet pan with parchment paper and preheat oven to 450F.
  5. Spread vegetables and chicken on sheet pan and bake for 15 minutes.
  6. Last, drizzle leftover sweet and sour sauce over entire dish and add desired garnish (optional).

tips to make sheet pan aip/paleo sweet and sour chicken with veggies extra flavorful and easy:

  • The trick is all in the marination!
    • The chicken will more fully take on the sweet and sour flavors of this sauce if you marinate it in the fridge for at least 30 minutes to 1 hour. The flavors will have more time to meld together, and the chicken will soak up that deeper flavor.
    • I similarly use this technique in my Mango Lime BBQ Chicken recipe for deeply flavorful bbq grilled chicken. The longer you let your chicken marinate, the juicier and more flavorful it will be!
    • Marinating Tip: If you have more time, you can marinate proteins for several hours or even overnight so it’s fully infused with the marinade flavor.
  • If want to make this Sheet Pan Sweet and Sour Chicken even quicker and easier, skip the marinating!
    • Drizzle the sweet and sour sauce directly over the chicken on the sheet pan, mix and then bake straight away!
    • Pouring the sauce straight on to the chicken is a faster way to make this recipe although it won’t be as flavorful.
  • Use more than one sheet pan if necessary. You want to avoid overcrowding the sheet pan, so the chicken and vegetables get a nice crisp to them rather than steaming.

Ingredients

Sweet and Sour Sauce

  • 3 TBSP coconut aminos
  • 1/2 cup pineapple juice
  • 1/4 cup apple cider vinegar
  • 1/4 cup coconut sugar
  • 1/4 cup nomato sauce
  • 1/4 tsp salt
  • 1 TBSP arrowroot starch
  • 1 TBSP water

Sheet Pan Chicken and Vegetables

  • 1 lb boneless, skinless chicken thighs or breasts, chopped in 1/2-inch cubes
  • 1/4 cup olive oil, divided
  • 1 tsp sea salt, divided
  • 1 large red onion, roughly chopped
  • 3 heads baby bok choy, sliced in half vertically
  • 1 head broccoli chopped into florets, stem included
  • 1/2 cup pineapple chunks

Garnish (optional)

  • Cilantro or green onions (chopped)
  • Sesame or chili flakes (omit for AIP)

Instructions

Sauce

  1. In a small saucepan on medium heat, combine coconut aminos, pineapple juice, apple cider vinegar, coconut sugar, nomato sauce, and salt. Bring to a boil and whisk.
  2. While bringing to a boil, make a slurry with arrowroot starch and water. Whisk slurry into saucepan.
  3. Set aside and let thicken.

Chicken and Vegetables

  1. To a large bowl add diced chicken. Drizzle with 2 TBSP olive oil, 1/2 tsp salt and half of the sweet and sour sauce. Set aside in fridge to marinate for at least 30 minutes – 1 hr.
  2. To a large bowl, add red onion, baby bok choy, broccoli, and pineapple chunks. Toss with remaining 2 TBSP olive oil and 1/2 tsp sea salt.
  3. Line one large sheet pan. Preheat oven to 450F.
  4. Spread marinated chicken on to 1/3 of sheet pan and vegetables on to the remaining portion.
  5. Bake in the middle rack of oven for 15 minutes.
  6. Drizzle remaining sweet and sour sauce over the entire dish. Garnish with cilantro or green onions. Sesame or chili flakes can be added (if AIP reintro) if desired.

    Need to eat AIP for my 16yr old daughter and probably myself! Made this for dinner the other night and everyone liked it – (dad, brother too) -may not add Thyme next time as I am not a huge fan of that flavor. However, daughter asked tonight do we have any more of that yummy chicken…it was sooooo gooood! It was a lot of prep! Especially the nomato but I am cooking up two servings of the sauce and going to freeze. And find other recipes for the nomato sauce. Going to try more recipes! Thanks!
