Ground Pork with Vegetable and Noodles

When I want a quick and tasty meal on the table, a quick stir fry with noodles is perfect. My kids love any kind a noodle dish, so it's always a dish I know they will enjoy.

One of my favourite flavours for stir fry sauces is Hoisin Sauce and you can easily make it go that little bit further so that is coats everything in the pan with a few additional ingredients to make the sauce.

Vegetables for Stir Fries

There really is not right or wrong when it comes to vegetables to add to a stir fry, you really can adapt and add whatever vegetables you like.

For this recipe I used peppers, mange tout, cabbage, and spring onions.

But other great vegetables to add into stir fries are:

  • Bean Sprouts
  • Carrots
  • Sugar Snap Peas
  • Mushrooms
  • Broccoli
  • Green Beans
  • Baby Corn
  • Water Chestnuts
  • Kale
  • Shredded Brussels

Hoisin Stir Fry Sauce

For the delicious sauce that makes this dish I use the following ingredients.

4 tablespoons of hoisin sauce
1 tablespoon of dark soy sauce
4 tablespoons water
2 tablespoons of tomato paste (puree)
1 teaspoon of grated ginger root
2 cloves of garlic, crushed
spray oil

Just mix all this together in a small bowl, and use it for any stir fry you like.

My favourite brand of hoisin sauce and soy sauce is by Lee Kum Lee.

What protein can I use in Stir Fries?

I used ground pork (pork mince) in this recipe as it was what I had on hand, but you can use any ground meat(mince) or chicken strips, pork or beef strips or even some prawns (shrimp) or for a vegetable alternative use some meat free strips (like quorn).

Best Noodles for a Stir Fry

The most popular type of noodles to use in a stir fry are egg noodles, you can buy packs of dried egg noodles and they come in different sizes or width. Avoid using fresh cooked noodles as they are usually coated in oil and higher calories.

If you are gluten free, there are heaps of options now for gluten free noodles, such as rice noodles, or noodles made from vegetables or beans. I sometimes use brown rice spaghetti too which works perfectly in a stir fry.

Just remember if you are gluten free, you will also need to use gluten free soy sauce and Hoisin sauce or which there are various options available.

Best Pan for Stir Fries

The best type of pan for stir fries is a wok, and there are various choices from carbon steel (the most popular choice) to non stick and even cast iron versions.

However, I prefer to just use a frying pan for my stir fries because I have an electric stove and getting an even heat on a wok can be quite tricky. You can get flat bottomed woks which are better for electric hobs, but I still prefer a good quality frying pan.

I have various frying pans which I love and two of my favourites are All-clad and Calphalon for good quality non stick.

Hoisin Pork and Noodles

Hoisin Pork and Noodles - ground pork coated in a delicious Hoisin sauce with tender stir fried vegetables and egg noodles.

Ingredients

  • 455g (16oz) of extra lean pork mince (ground pork)
  • 180g of egg noodles, dried
  • 150g of shredded cabbage
  • 1 red pepper, sliced
  • 1 orange pepper, sliced
  • 80g of snow peas (mange tout)
  • 2 spring onions, sliced
  • cooking oil spray (I used avocado)

For the sauce

  • 4 tablespoons of hoisin sauce
  • 1 tablespoon of dark soy sauce
  • 4 tablespoons water
  • 2 tablespoons of tomato paste, puree
  • 1 teaspoon of grated ginger root
  • 2 cloves of garlic, crushed

Instructions

  1. Place the noodles into a saucepan of boiling hot water and simmer to soften, drain and set aside.
  2. Spray a wok or large frying pan with cooking oil spray, add the pork mince and fry until lightly browned.
  3. Add the veggies and fry for a few minutes until tender.
  4. Add in the noodles
  5. In a small bowl, mix together the sauce ingredients and add this into the pan.
  6. Mix to coat until the noodles and pork is fully coated in the sauce and heated through.
  7. Sprinkle with chopped spring onions.
  8. Serve into bowls and enjoy!!
