I don’t know if it’s because it’s still ridiculously hot outside, or if my body is making space for all the holiday goodies I’m sure to consume over the next few months but I haven’t had a very big appetite lately. I have a smoothie for breakfast, small salad or sandwich for lunch and by the time dinner rolls around I’m still not very hungry. My kids and husband on the other hand are STARVING all day long so I’ve been trying to find a happy balance between our appetites.

My answer has been appetizers. I have started making appetizer/snacks when my oldest gets home from school and it’s the perfect size of snack for the kids and I make enough that I can save and have for dinner. I’ve also been on an Asian food kick lately so I’ve been trying a few different potsticker and egg roll recipes. I haven’t found any I was really in love with until I made these Sweet & Sour Chicken Potstickers.

You all know how much I love to cook but this new back to school schedule is kicking my butt. By the time I have lunch made for the kids at home, the afternoon snacks made (plus all the other mom things) I’m burnt out and don’t have much energy to cook dinner. So I’ve been looking for quick dinner ideas that are not only easy to make but healthy too. And I’m almost sad to say that I’ve been turning to frozen meals; almost.

We’ve had Tai Pei meals a few times the past month or so and we’ve quickly become fans! Not only are they made with healthy ingredients but they taste good and leave us feeling full too. That’s part to do with the containers themselves. The containers were recently redesigned so that they hold the perfect portion sizes but also have plenty of room to steam your food so it tastes crisp and fresh. The best part is they are so easy to make! If I have a busy week with PTA meetings, work projects and soccer games and don’t have time to meal plan, it’s OK. A few minutes in the microwave and I’ve got a healthy, tasty meal. You can check out a few of the different flavors in the video below.

The Tai Pei meals also pair great with my new favorite treat; these Sweet & Sour Chicken Potstickers. These are really easy to make (you can even make a big batch, freeze them and heat them up later) and are packed full of zesty flavor. I have been making a big batch on the weekends and then cooking them on the stove at the same time my Tai Pei meals are cooking in the microwave.

I got the recipe for the sauce from one of our neighbors that used to own a Thai restaurant and it’s seriously my favorite sauce recipe ever! Not only is it easy to make but it’s the perfect mix of sweet and spicy and everyone in my family loves it.

Sweet and Sour Chicken Potstickers

Ingredients

  • 1 lb ground chicken
  • 1 cup diced peppers
  • wonton wrappers

Sweet and Sour Sauce

  • 1 cup water
  • 2 cup white sugar
  • 1/2 cup brown sugar
  • 1 cup Sweet Chili Sauce
  • 1/2 cup vinegar

Instructions

  • Combine all sauce ingredients in a saucepan and bring to boil over medium high heat.

  • Set aside.

  • In a bowl combine ground chicken and diced peppers.

  • Add 1/2 of the sauce and stir to combine.

  • Put about 1 Tbsp of the chicken mix in the middle of the won ton wrapper.

  • Fold over won ton wrapper into a half moon shape and seal shut.

  • Heat vegetable oil in a skillet over medium high heat.

  • Cook won tons in oil for 2-3 minutes per side until golden brown.

  • Serve with remaining sweet and sour sauce.
